When Summer comes to mind, you picture outdoor barbecues with all your loved ones, enjoy a drink or two while the kids splash about in the pool or sprinkler. And nothing beats throwing on some sausages on the BBQ and dishing up a fresh summer salad to go with it. This watermelon salad is just what you need.
Whether you’re hosting a BBQ with friends and family, celebrating a birthday, or looking for an easy weeknight dinner on a hot Summer’s day, this watermelon salad is delicious. And better yet, so easy to throw together.
Salad Ingredients
Serves 6
- Half seedless watermelon
- 1 avocado
- 1 cucumber
- 10 mint leaves
- Feta to sprinkle
- 1 tbs olive oil
- 1 tbs lime juice
- Pinch salt
- Pinch pepper
Watermelon salad Recipe
- Chop up watermelon into 3cm pieces and arrange on a service tray. Note: a tray works better than a bowl for this recipe to help balance out the ingredients. Looks impressive too!
- Cut avocado into 3cm pieces and spread across the tray.
- Chop cucumber in half lengthways. Chop each half in lengthways again. Now slice into small pieces. Scatter throughout the salad.
- Grab your mint leaves and tear in half and place across top of salad.
- Sprinkle feta on top, breaking it apart with your fingers.
Salad Dressing
This watermelon salad is perfect on its own, but it if you’re looking for something a little extra, try out this dressing.
- Simply mix together olive oil, lime juice, salt and pepper in a small bowl.
- Leave in fridge to chill and wait until serving time to drizzle on top of your salad.
