Mini Tortilla Cups
They are so easy to throw together. All the ingredients can be prepared ahead of time, so all you need to do on the day is chuck them together. You can play around with the ingredients and substitute to your liking, or even ask the kids for their input. You could even get a production line going at the party and have the kids help you put them together. Kids absolutely love helping out in the kitchen and are more likely to eat them if they get to choose the ingredients. Note that these mini tortilla cups can get messy, so it may be best to serve them outside!

Ingredients
- 8 flour tortillas
- 1 kg beef mince
- 1 x can tomatoes
- Cheddar cheese
- 1 tomato, chopped
- 1 avocado, mushed
- Black olives, sliced
- Lettuce
- Sour cream, to serve
Method
Preheat oven to 160C.
Using an egg ring or similar, cut each tortilla into three circle shapes.
Place each circle into a muffin tray, leaving the centre open for the filling. Bake in over for 10 minutes. Take out of oven and leave to cool.
Add beef mince to frypan on medium heat and stir until cooked through. Add can tomatoes, mix in, and leave to simmer for 15 minutes.
Line tortilla shell with lettuce and tomato slices. Next add beef mixture. Top with olives, cheese, avocado and sour cream.
Serve!
